We use only the ingredients that belong in a proper stollen: real German butter, carefully sourced almonds, plump sultanas, citrus peel, rum and our closely guarded family spice blend. No additives. What Is Christmas stollen and why does ours taste different?


Christmas stollen — known in German as Christstollen or Weihnachtsstollen — is one of the oldest and most beloved festive baked goods in the world. Its origins lie in Saxony, in the very region where Bäckerei Weißbach has been baking for generations. A good stollen is far more than a fruit bread: it is a dense, deeply aromatic loaf enriched with butter, spices and dried fruit, shaped entirely by hand, baked slowly and then finished with a generous coating of melted butter and icing sugar. Sliced thinly and savoured with a cup of coffee or tea, it is one of the great pleasures of the festive season.

What sets our stollen apart begins with the butter. By German food law, a loaf can only be called "Butterstollen" if it contains at least 40 parts butter per 100 parts flour — a standard we exceed as a matter of course, because we know what butter does for texture and flavour. It also begins with the sultanas — plump, hand-selected and soaked in rum before they ever touch the dough. And it begins with our spice blend: a family recipe refined over decades in our Stollberg bakery, which gives our stollen its unmistakable depth and warmth.

We offer three distinct varieties. Our classic butter stollen is the full traditional experience: sultanas, almonds, candied citrus peel, rum and butter in perfect harmony. Our almond stollen strips things back for the purist — no raisins, no dominant spices, just the clean, fragrant flavour of sweet almonds and fine butter. And our poppy seed stollen brings something visually and gastronomically distinct: a rich, silky poppy filling swirled through light butter-yeast dough, deeply aromatic and endlessly satisfying.

Lagerung

Wie lagert man einen Stollen, damit er lange frisch und saftig bleibt?

Damit dein Stollen möglichst lange frisch bleibt, bewahrst du ihn am besten in der Originalverpackung oder fest eingewickelt in Alu- oder Frischhaltefolie auf.

Ideal ist ein kühler, trockener Ort mit gleichmäßiger Temperatur zwischen 10 und 15 °C – z. B. eine Speisekammer oder ein unbeheizter Keller. So bleibt der Stollen wochenlang aromatisch und saftig.

Haltbarkeit

Wie lange ist ein Stollen eigentlich haltbar?

Unsere Stollen sind von Natur aus lange haltbar – dank bester Zutaten, handwerklicher Verarbeitung und der schützenden Butterschicht. Bei optimaler Lagerung schmeckt dein Stollen bis zu acht Wochen nach dem Versand frisch und aromatisch.

Tipp: Wer länger genießen möchte, kann den Stollen portionsweise einfrieren. So bleibt der Geschmack auch nach Monaten erhalten.

Anschneiden

Wie schneidet man einen Stollen richtig an, damit er nicht austrocknet?

Damit dein Stollen nicht austrocknet, schneidest du ihn am besten von der Mitte aus an. Danach die beiden angeschnittenen Hälften wieder fest aneinanderschieben und gut verpacken – so bleibt die Schnittfläche geschützt, und der Stollen behält seine Saftigkeit.

So schmeckt jede Scheibe wie frisch gebacken.
