What makes our butter stollen so special?
Butter stollen is the gold standard of German Christmas baking — and for good reason. By law, a loaf can only be called Butterstollen if it contains a minimum of 40 parts butter per 100 parts flour. But at Bäckerei Weißbach, that minimum is merely a starting point. We use butter generously and without compromise, because we know it is what gives a great Stollen its distinctive richness and silky texture.
Our butter stollen is built around a handful of exceptional ingredients, each chosen for quality rather than convenience. The sultanas are hand-selected and soaked in rum before baking, so they emerge from the oven plump and fragrant. The almonds come from Spain, where the climate produces a sweeter, fuller nut. The candied citrus peel — a combination of lemon and orange — adds brightness and a gentle chew that contrasts beautifully with the soft crumb.
Holding it all together is our family spice blend: a closely guarded recipe that has been passed down through generations of master bakers in Stollberg, Saxony.
