Our almond stollen is a speciality for true connoisseurs — one of the most loved offerings from our bakery and a recipe we are quietly very proud of. Here, neither raisins nor bold spices are allowed to steal the spotlight. Instead, the stage belongs entirely to sweet almonds, enveloped in the finest German butter and lifted by the faintest trace of bitter almond oil. The result is a flavour that is at once delicate and deeply satisfying: clean, fragrant and quite unlike any other variety of stollen.

Why our almond stollen is different


The Mandelstollen — almond stollen — represents one of the most elegant variations in the German Christmas baking tradition. While the classic butter stollen celebrates the bold combination of sultanas, rum and spice, the almond stollen takes a different path altogether: one of restraint, purity and refinement.

At Bäckerei Weißbach, we have spent years perfecting our almond stollen recipe. The sweet almonds are carefully sourced for quality and freshness. The bitter almond oil is used with precision — just enough to add depth and a subtle floral note without ever becoming sharp. And the butter, as always, is German and of the highest quality.

There are no raisins to compete for attention. No heavy spices to crowd out the almond. Just a beautifully moist, gently fragrant loaf that tastes of Christmas in the most understated and sophisticated way imaginable.

Lagerung

Wie lagert man einen Stollen, damit er lange frisch und saftig bleibt?

Damit dein Stollen möglichst lange frisch bleibt, bewahrst du ihn am besten in der Originalverpackung oder fest eingewickelt in Alu- oder Frischhaltefolie auf.

Ideal ist ein kühler, trockener Ort mit gleichmäßiger Temperatur zwischen 10 und 15 °C – z. B. eine Speisekammer oder ein unbeheizter Keller. So bleibt der Stollen wochenlang aromatisch und saftig.

Haltbarkeit

Wie lange ist ein Stollen eigentlich haltbar?

Unsere Stollen sind von Natur aus lange haltbar – dank bester Zutaten, handwerklicher Verarbeitung und der schützenden Butterschicht. Bei optimaler Lagerung schmeckt dein Stollen bis zu acht Wochen nach dem Versand frisch und aromatisch.

Tipp: Wer länger genießen möchte, kann den Stollen portionsweise einfrieren. So bleibt der Geschmack auch nach Monaten erhalten.

Anschneiden

Wie schneidet man einen Stollen richtig an, damit er nicht austrocknet?

Damit dein Stollen nicht austrocknet, schneidest du ihn am besten von der Mitte aus an. Danach die beiden angeschnittenen Hälften wieder fest aneinanderschieben und gut verpacken – so bleibt die Schnittfläche geschützt, und der Stollen behält seine Saftigkeit.

So schmeckt jede Scheibe wie frisch gebacken.
